The hypothesis put forward by Wiswe and Bunsmann-Hopf that German gandelat (‘milk dish’) in Rumpolt’s New Kochbuch (1581) is derived from Italian candito latte is untenable. In actual fact, the basis is Italian capo di latte (in Northern dialects caodelat, cao de late, cau de lat, plural cavi di latte, caidalatte), which means ‘milk skin’ or ‘milk cream’.
